Fish Mandi

4 cup basmati rice
1 pes whole fish
2 tablespoon ginger garlic paste
2 pes fresh lemon juice
1 teaspoon turmeric powder
2 teaspoon paprika powder
2 teaspoon mandi masala powder
salt to taste
1/4 cup oil /ghee
3 pes onion cut 1/4 pes
little whole garam masala
charcoal for smoky flavour
green chili coriander for garnish

Soak the basmati rice in water for about 30 minutes.

In a pot, heat the oil or ghee and sauté the chopped onions until golden brown.

Add the ginger garlic paste and sauté for a few more minutes.

Add the whole fish and cook until it starts to brown.

Stir in the turmeric powder, paprika powder, and mandi masala powder.

Add the soaked basmati rice and mix well with the spices and fish.

Pour in enough water to cook the rice and add salt to taste.

Cover the pot and cook until the rice is tender and water is absorbed.

For a smoky flavor, place a piece of charcoal on top of the rice and cover the pot for a few minutes.

Garnish with green chili and coriander before serving.
