Prepare a loaf pan by lining it with parchment paper or spraying it with nonstick spray.

In a large mixing bowl, combine 1 and 3/4 cups all-purpose flour, 3/4 cup granulated sugar, 1/2 teaspoon salt, 2 teaspoons baking powder, and 1 and 1/2 teaspoons ground cinnamon (if using). Whisk until well combined and set aside.

In a separate bowl, peel and mash 4 medium bananas or 3 large bananas until slightly chunky, measuring out about 1 and 1/2 cups of mashed banana.

Add 2 large eggs, 1/2 cup oil or melted butter, and 1 tablespoon vanilla extract (if using) to the mashed bananas. Whisk until well combined.

Pour the wet ingredients into the dry ingredients and switch to a rubber spatula. Stir until just combined, about 20 to 30 seconds, being careful not to overmix.

If desired, fold in any add-ins like chocolate chips or toasted nuts at this stage.

Pour the batter into the prepared loaf pan and bake for 55 to 65 minutes, or until a tester comes out with moist crumbs.
