1 cup (112g) almond flour
1/4 cup + 2 tbsp (54g) coconut flour
1 tbsp (10g) vital wheat gluten or 1/4 tsp xanthan gum
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 cup + 2 tbsp (90g) unsalted, room temperature butter
6 1/2 tbsp monkfruit/erythritol blend
3 1/2 tbsp Sukrin Gold
1/2 tsp blackstrap molasses (optional)
1 tsp vanilla extract
2 eggs
1/4 cup (60g) stevia-sweetened chocolate chips

Pre-heat your oven to 350°F.

In a large bowl, combine your almond flour, coconut flour, vital wheat gluten (or xanthan gum), baking soda, baking powder, and salt.

In another bowl, cream together the butter and sweeteners until light and fluffy.

Add the eggs and vanilla extract to the butter mixture and mix until well combined.

Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.

Fold in the chocolate chips.

Scoop the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.

Bake for 10-12 minutes or until the edges are golden brown.

Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
