Keto Chocolate Chip Cookies

100 g unsalted butter
1 teaspoon vanilla extract
1/4 to 1/3 cup stevia
1 egg
1/4 cup coconut flour
1/4 cup dark chocolate chips

Melt 100 g (3.5 oz) of unsalted butter in the microwave or on the stovetop.

Pour the melted butter into a large bowl.

Add a pinch of salt, 1 teaspoon of vanilla extract, and 1/4 to 1/3 cup of stevia to the bowl.

Mix the butter, stevia, vanilla, and salt together until well combined.

Crack 1 egg into the mixture and mix until smooth.

Add 1/4 cup of coconut flour to the mixture and mix until almost combined.

Stir in 1/4 cup (or more) of dark chocolate chips until you have a nice cookie dough.

Refrigerate the cookie dough for 15 to 30 minutes to thicken.

Preheat the oven to 180°C (350°F).

Scoop a teaspoon of cookie dough onto a well-greased baking tray, making about 12 cookies.
