Prepare the dough by mixing flour, yeast, sugar, and water until smooth. Let rise until doubled, about 1 hour.
Sauté onions in olive oil until translucent, about 5 minutes.
Add spinach to the onions and cook until wilted, about 3 minutes.
Stir in lemon juice, pine nuts, salt, black pepper, and cumin; remove from heat and let cool.
Preheat the oven to 375°F (190°C).
Divide the risen dough into small balls and roll each into a thin circle.
Place a spoonful of the spinach mixture in the center of each circle.
Fold the dough over the filling to create a triangle or a pocket, sealing the edges well.
Brush the tops with beaten egg and sprinkle with sesame seeds.
Arrange on a baking sheet and bake until golden brown, about 20-25 minutes.
