Homemade Graham Crackers

Preheat the oven to 350°F (175°C).
Line a baking sheet with parchment paper.
In a large bowl, whisk together whole wheat flour, all-purpose flour, baking soda, salt, and cinnamon.
In another bowl, cream together unsalted butter and brown sugar until light and fluffy.
Add honey, milk, and vanilla extract to the butter mixture; mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Divide the dough in half and shape each half into a rectangle.
Wrap each rectangle in plastic wrap and refrigerate for 30 minutes.
Roll out one rectangle of dough on a floured surface to about 1/8 inch thick.
Cut the dough into squares or rectangles and place them on the prepared baking sheet.
Prick the tops of the crackers with a fork to prevent puffing during baking.
Bake in the preheated oven for 12-15 minutes, or until golden brown.
Remove from the oven and let cool on a wire rack.
