12 cups water

3 star anise
1 cinnamon stick
4 cloves
4 cardamom pods
1/4 cup fish sauce
1 tablespoon sugar
8 oz rice noodles
1 lb beef sirloin
2 cups bean sprouts
1 cup basil
2 limes
1 jalapeño

Roast beef bones in a hot oven until browned, about 30 minutes.

Add roasted bones to a large pot and cover with water.

Bring water to a boil, then reduce to a simmer.
