1 lb beef meaty ribs
1 lb beef bone marrow
1 large brown onion
2 inches ginger
3 star anise
1 tablespoon coriander seeds
2 cinnamon sticks
5 cloves
5 cardamom pods
3 tablespoons fish sauce
1 tablespoon sugar
1 tablespoon beef stock powder
8 oz rice sticks (Banh-Pho)
1 cup cilantro / coriander
2 cups beansprouts
1/2 cup spring onion
2 bird chilies
1 lime
2 tablespoons sriracha or Tabasco
2 tablespoons hoisin sauce

Prepare rice sticks according to package instructions.

Heat a cast iron skillet and grill the onion and ginger without oil until charred.

Boil water in a large pot and add the beef, including brisket and meaty bones.

After boiling for about 10 minutes, strain the beef and wash under running water to clean.

Return the beef to a clean pot with fresh water, add onion, ginger, and spices (star anise, cinnamon, coriander seeds, cloves, cardamom).

Cover and simmer for 1-2 hours until the beef is tender.

Add salt, 2.5 tablespoons of sugar, and fish sauce to taste.

Remove the brisket to prevent it from becoming tough, and continue simmering the broth with the bones.

Strain the broth again and adjust seasoning as needed.
