In a bowl, whisk together the eggs and sugar with a wire whisk, no need for a mixer.
After it gets a bit frothy, add the yogurt and vegetable oil.
Mix a bit with the whisk, then sift in the dry ingredients and mix them in.
Cut half of the apricots into cubes and mix them into the batter.
Grease the mold and place parchment paper at the bottom.
Pour the batter into the mold and arrange the remaining apricots on top.
Bake in a preheated oven at 190 degrees Celsius (375 degrees Fahrenheit) without a fan for 30-40 minutes.
Adjust according to your oven.
As soon as you take it out, you can glaze the top with syrup or sprinkle powdered sugar.
