Season the pork loin with salt and pepper to taste on all sides and set it aside for a minute.
In a large bowl, mix the apricot preserves with 3 tablespoons of Dijon mustard and 3 tablespoons of balsamic vinegar; stir well until combined.
Add the pork loin to the bowl and ensure it is well covered with the marinade, rubbing it in for about 1 minute.
Cover the bowl with foil and refrigerate for at least 2 hours.
In a large saucepan, heat 3 tablespoons of extra virgin olive oil on high heat.
Once the oil is hot, add the pork loin and cook for about 3-4 minutes on each side until browned on all sides.
Add the marinade mixture and 1 cup of beef broth to the saucepan with the pork loin; sprinkle with salt and pepper to taste and stir.
Cover the saucepan with a lid and cook on medium-low heat for about 30 minutes.
After 30 minutes, flip the pork loin and pour some of the cooking liquid over it; cover again and continue cooking for another 30 minutes or until the internal temperature reaches 150°F.
Let the pork loin rest for 10 minutes before slicing.
After resting, slice the pork and place the pieces back in the cooking liquid for a few seconds to soak up the juices.
