Preheat the oven to 180°C.
Roll out the puff pastry and place it in a tart pan.
Bake the puff pastry in the oven for 20 minutes.

Add hot water to the mixture and simmer until combined.
In a bowl, whisk together yolks, sugar, starch, and milk.
Combine the yolk mixture with the simmered apple mixture and stir until thickened.
Remove from heat and let cool for 30 minutes.
Whip the cream until soft peaks form and fold it into the cooled filling.
Pour the filling into the baked puff pastry shell.
