Peel the apples, cut them in half, and core them.
Thinly slice the apples to about an eighth of an inch using a mandolin slicer or a chef's knife.
Prepare the puff pastry, using store-bought for convenience, ensuring it's a good quality butter pastry.
If rolling out the pastry, roll it to just shy of a quarter inch thick.
Use an 8-inch springform pan to trace an 8-inch circle with a paring knife, saving the scraps.
Dock the pastry by piercing holes in it with a fork to allow for even baking.
Arrange the thin apple slices in an overlapping pattern on the pastry.
Brush the apples with a layer of melted butter gently to avoid moving them around.
Sprinkle half of the sugar (1.5 tablespoons) over the apples.
Preheat the oven to 400°F (204°C).
Bake the tart for 10 minutes.
After 10 minutes, add the remaining butter and sugar (1.5 tablespoons) on top of the apples.
Return the tart to the oven and bake for an additional 20 to 30 minutes, looking for a rich golden brown on the puff pastry.
Once baked, let the tart cool slightly before glazing.
Melt a quarter cup of apple jelly until fluid and brush it over the tart for shine.
Serve the tart at room temperature, optionally with whipped cream or vanilla ice cream.
