Prepare short crust pastry and place it on parchment paper on a baking tray.
Make almond cream by blitzing together 250g softened butter and 250g caster sugar until pale.
Add 4 eggs and 250g ground almonds to the butter and sugar mixture, mixing until creamy.
Peel and core royal gala apples using a peeler.
Slice the apples using a setting on the peeler for desired thickness.
Cut the apple slices in half and arrange them in a crown shape on the pastry.
Generously brush melted butter over the arranged apple slices.
Sprinkle demerara sugar evenly over the apples.
Bake in the oven at 170°C until golden and the pastry is cooked through.
Let the tart cool down after baking.
Glaze the tart with apricot glaze for shine.
Sprinkle roasted flaked almonds around the tart and dust with icing sugar.
