Ensure eggs are at room temperature to prevent cracking when boiled.
Bring a small pot of water to a boil.
Gently place room temperature eggs into the boiling water using a wooden spoon.
Boil the eggs for 8 minutes for a jammy texture, or 10-12 minutes for firmer yolks.
Drain the hot water and fill the pot with cold water and ice to create an ice bath.
Once cool enough to handle, peel the eggs and slice one in half for the recipe.
Cook turkey bacon in a non-stick pan over medium heat for a few minutes, flipping until golden.
Break the cooked turkey bacon into small crumbles once cool enough to handle.
Slice scallions thinly for topping.
In a small saucepan, combine 1/2 cup rolled oats, 1/2 cup low sodium chicken broth, and 1/2 cup water.
Cook over medium-low heat for about 5 minutes, stirring occasionally until creamy.
Add a couple of ice cubes to the oats to cool them slightly before adding egg whites.
Slowly stir in 1/2 cup egg whites to the oats, tempering to avoid scrambling.
Continue stirring over low heat until the oats are creamy and fluffy, increasing in volume.
Add 1/2 teaspoon low sodium soy sauce to the oatmeal for flavor.
Transfer the oatmeal to a serving bowl and top with the jammy hard-boiled egg, turkey bacon, scallions, and a sprinkle of black pepper.
