Heat a large nonstick pan or skillet over medium-high heat and add a couple tablespoons of extra-virgin olive oil.
Add one medium chopped onion and one diced sweet potato to the pan, season with a pinch of kosher salt and black pepper, and sauté until soft.
Cover the pan and let the vegetables cook for a few minutes.
In another pot, bring 2 cups of water to a boil.
Add 1 cup of quick cooking steel cut oatmeal to the boiling water, add a pinch of salt, and reduce the heat.
Cover and let the oatmeal cook until tender, stirring occasionally.
Prepare a fried egg to serve on top of the oatmeal.
Assemble the bowl with the cooked oats, sautéed sweet potatoes and onions, and top with the fried egg, tomatoes, avocado, and crumbled feta.
