Thinly slice the potatoes using a sharp knife or a mandolin.

In a bowl or jug, combine cream, stock, garlic, and thyme, and season well.

Layer the sliced potatoes with leeks and cheddar cheese in three layers, seasoning between each layer.

Finish with a layer of cheese on top.

Pour the cream mixture over the layered potatoes and leeks.

Preheat the oven to 180°C (356°F).

Bake in the oven for 1 hour or until the potatoes are tender and the cheese is golden.

Set aside to cool slightly before serving.

Sprinkle with thyme sprigs before serving.
