Combine oat flour, millet flour, baking powder, salt, and coconut sugar in a blender.
Add almond milk to the blender with the dry ingredients.
Blend all ingredients for about 30 seconds until well combined.
Let the batter sit for 5 to 8 minutes.
Heat a skillet on medium-high heat and add a tiny drop of grapeseed oil, spreading it with a paper towel.
Pour 1/4 cup of batter into the skillet.
Cook the pancake on one side for about 2 to 3 minutes until lots of bubbles form on the surface.
Flip the pancake and cook for another 2 minutes.
Check if the pancake is ready and remove it from the skillet.
Repeat the process with the remaining batter, adding more oil as needed.
