Prepare the matcha roll cake dough by mixing egg yolks with 25g of granulated sugar.
Whip the egg whites with 60g of granulated sugar until stiff peaks form.
Gently fold the whipped egg whites into the egg yolk mixture.
Sift in the cake flour and matcha powder, and fold until combined.
Melt the unsalted butter and mix with the milk, then fold into the batter.
Pour the batter into a 27 x 27 cm roll cake pan and bake in a preheated oven at 170℃ (338°F) for about 18-20 minutes, inverting the pan halfway through baking.
For the condensed milk cream, whip the heavy cream and mix with the condensed milk until smooth.
Prepare the red bean paste by cooking it to a spreadable consistency if necessary.
Once the cake is baked and cooled, spread the red bean paste over the surface, followed by the condensed milk cream.
Roll the cake tightly and slice it into pieces for serving.
