List ingredients: 5 teaspoons active dry yeast, 1/4 teaspoon white sugar, 1/2 cup warm water, 1 teaspoon homemade vanilla extract, 1 1/2 teaspoons salt, 2 eggs, 1/3 cup white sugar, 1 cup warm milk, 1/3 cup vegetable oil, and 5 cups all-purpose flour.
Activate the yeast by mixing it with the sugar and warm water, letting it sit for up to 10 minutes until frothy.
Add the activated yeast mixture to a bowl, then mix in the remaining ingredients, gradually adding flour until the dough is firm and elastic.
Knead the dough for about 5 to 8 minutes until smooth and elastic.
Grease a bowl and place the dough inside, covering it with a damp towel to rise for 30 to 40 minutes until doubled in size.
Deflate the risen dough and pinch off pieces to shape into beaver tails.
Roll out each piece on a floured surface into an oblong shape, about the size of an apricot.
Heat vegetable oil in a deep fryer to 385°F.
Fry the dough pieces until golden brown, about 2-3 minutes per side, flipping once.
Remove from oil and drain on paper towels.
Coat the fried beaver tails with a mixture of cinnamon and sugar, or top with dark chocolate or Nutella.
Prepare a savory version by topping a plain beaver tail with crushed garlic and cheese.
