Traditionally made during the harvest season, this stir-fry showcases the fresh flavors of broad beans combined with aromatic spices. It is often served with rice and dal, making it a staple in many households. Today, variations of this dish can be found across India, adapting to local tastes and available ingredients.

Coconut oil adds a unique flavor while being a healthier fat.
Wash 1/2 kg broad beans and set aside.
In a pot, add enough water to submerge the beans and 1 teaspoon salt; bring to a boil.
Boil the beans on high flame for about 5-6 minutes until tender.
Drain the water and mash the beans slightly to remove excess water.
Set the mashed beans aside to dry.
In a mixer jar, add 1 cup roasted peanuts, 10 dried red chilies, and salt to taste; grind to a fine powder.
Add 10 cloves of garlic to the ground mixture and blend again until well combined.
Heat 1/2 tablespoon oil in a pan until hot.
Add mustard seeds, cumin seeds, and the ground mixture to the hot oil; sauté until fragrant.
Chop and add 1 medium onion to the pan; cook until the onion is translucent.
Add curry leaves and 1/2 teaspoon turmeric powder; mix well.
Add the boiled broad beans to the pan and stir to combine with the spices.
Cover the pan and cook for 2-3 minutes on low heat to let the flavors meld.
Serve hot with rice or roti.
