Preheat a pan over medium heat and add a little olive oil.
Place one tortilla in the pan.
Crack 4 eggs into a bowl (you can also crack them directly onto the tortilla if you prefer) then pour the eggs over the tortilla.
Season with salt, black pepper, oregano, and paprika.
Use a fork to gently whisk the eggs right in the pan.
Chop one green onion and sprinkle it over the egg mixture.
Cover with a lid and cook over medium low heat for about 5 minutes, or until the eggs are set.
In another pan, heat some olive oil over medium heat.
Slice ½ onion and add to the pan; sauté for about 2 minutes.
Slice 50g red bell pepper and add to the pan.
Slice 50g orange bell pepper and add to the pan.
Slice 50g green bell pepper and add to the pan.
Stir fry for about 2 minutes.
Slice 2 mushrooms and add to the pan.
Meanwhile, the eggs in the first pan should be cooked; remove the lid.
Grate 100g mozzarella cheese and set aside.
Open 1 can of tuna, drain well, and add it to the vegetable pan; stir to combine.
Dice 2 tomatoes and add to the pan; cook for about 2 minutes on medium heat.
Season with salt and black pepper; cook for about 1 minute.
Spread the tuna and vegetable mixture evenly over the cooked eggs in the first pan.
Sprinkle the grated mozzarella evenly on top.
Place another tortilla over the cheese, then sprinkle a little more mozzarella on top.
Cover with a lid and cook over medium heat for 3-5 minutes, or until the cheese is fully melted.
Once the cheese is completely melted, turn off the heat and carefully slide it out of the pan.
Sprinkle some parsley (optional).
Slice it up and enjoy it while it’s hot.
