Heat a pan on the gas stove and add 1 serving spoon of oil.

Add 10-12 cloves of garlic and sauté for a few seconds until slightly pink.

Add 1 small chopped onion, 1 small chopped tomato, and 1 small chopped bell pepper (optional) and sauté for 1 to 1.5 minutes until the vegetables soften and release some water.

Chop some fresh coriander and add it to the pan for flavor (optional).

Add 1 small tomato that has been pureed in a mixer grinder. Use ripe tomatoes for better taste.

Add 1/2 teaspoon black pepper powder, 1 tablespoon Kashmiri red chili powder, 1.5 teaspoons cumin powder, and salt to taste. Mix everything well.

Cover the pan and let it cook on low flame until the oil separates from the masala, which should take a few minutes.

Make space in the masala and crack 4 eggs into the pan. If you're unsure about the eggs, crack them into a separate bowl first before adding them to the pan.

Sprinkle some black pepper and salt on the eggs, and cover the pan again. Cook on low flame for 3-4 minutes until the eggs are cooked to your liking.

Garnish with fresh coriander and serve with parathas or bread.
