Traditionally enjoyed during festive occasions, it reflects the region's love for sweet, creamy dishes. Today, variations exist across the Middle East and Mediterranean, often incorporating local flavors and nuts, making it a versatile treat enjoyed by many.

Sunflower seeds are budget-friendly and nut-free.
Prepare the syrup by taking 1 liter (5 cups) of milk into a pot.
Add 2 cups of sugar on top of the milk and put it on the stove.
Stir until the sugar dissolves completely, then remove from the stove and let it cool.
In another pot, take 1 teacup of vegetable oil and add 100 grams of butter on top to melt it.
Add 2 cups of semolina to the melted butter and sauté, stirring constantly over medium heat until it reaches a light or heavy toast, aiming for the color of milky coffee.
Reduce the heat and pour the lukewarm syrup over the toasted semolina, stirring constantly to prevent clumping.
Press down on the mixture and continue to mix quickly until it absorbs the milk.
Add 1 cup of tahini and mix well again before removing it from the stove.
Shape the halva using a spoon or silicone molds as preferred.
Garnish with crushed pistachios before serving.
