Vanilla bean paste offers a richer flavor.
In a saucepan, combine 1 egg yolk, 60 gr xylitol or regular sugar, a pinch of salt, and 2 teaspoons vanilla extract; mix well.
Add 25 gr cornstarch and mix again.
Pour in 250 ml of milk and cook over medium heat, stirring continuously until thickened.
Remove from heat and stir in 65 gr butter until melted; cover and let cool to room temperature.
For the dough, mix 250 gr flour and a pinch of salt.
Add 12 gr fresh yeast, 60 gr coconut syrup or regular sugar, and 150 ml warm milk; mix well.
Knead the dough for about 5 minutes.
After kneading, add 25 gr room temperature butter and continue kneading until well integrated.
Shape the dough into a ball and place it in a greased bowl; cover and let it rise until doubled in size.
Once risen, punch down the dough and divide it into six equal pieces.
Shape each piece into a ball and cover with plastic wrap; let rest for 20 minutes.
After resting, flatten one ball and place it on a baking sheet lined with parchment paper.
Use a glass to make a hole in the center of the dough piece.
Fill the center with the prepared cream.
Cover with plastic wrap and let rise again until doubled in size.
Brush the edges with a little milk before baking.
Bake in the oven at 180°C for 20 minutes, depending on your oven.
Let cool before transferring to a wire rack and decorating with coconut syrup or honey.
