Start by making the syrup with 3/4 cups of granulated sugar and 1/2 cup of water in a medium-sized saucepan.
Stir the sugar and water together and place on low to medium heat until it comes to a boil, then turn off the heat and set aside to cool.
Grease the forms with 1 tablespoon of unsalted butter and coat with 1 tablespoon of granulated sugar using a pastry brush.
Strain the 8 egg yolks into a medium-sized bowl using a strainer and spatula.
Add 3/4 cups of shredded coconut and 2 tablespoons of melted unsalted butter to the egg yolks and mix to combine.
Pour the cooled sugar syrup into the egg mixture and mix until well combined.
Fill the greased forms with the mixture until they are 3/4 full.
Prepare a water bath by placing the filled forms into a deep pan and pouring in 4 cups of boiling water until it covers the forms halfway.
Bake in a preheated oven at 350°F for 45 minutes or until lightly golden brown.
Let the kading cool for 5 minutes before transferring them to cupcake liners by pressing the edges of the forms.
