Start by slicing the chouriço and cutting the bacon into cubes.

In a pot, add a drizzle of olive oil and the bacon, cooking it slowly with the meat for 15 minutes.

Meanwhile, chop the onion, garlic, and carrot, and add them to the pot along with a sprig of thyme and salt to taste.

Add a generous amount of rice to the pot and stir for 2 to 3 minutes.

Pour in red wine and stir for another minute.

Add 2.5 liters of chicken broth and then the chouriço and morcela.

Cover the pot with aluminum foil and let it cook for 15 minutes.

Finally, add 4 tablespoons of coriander sauce and a splash of vinegar to finish.
