In a large bowl, combine flour, sugar, and salt.
Add the activated yeast mixture, egg, melted butter, and cocoa powder to the dry ingredients; stir to combine.
Knead the dough until smooth, about 10 minutes.
Cover the dough and let it rise in a warm place until doubled, about 1-2 hours.
Punch down the dough and let it rest for 10 minutes.
If using, fold in the raisins and rum into the dough.
Divide the dough into three equal pieces and roll each into a long strand.
Braid the three strands together and tuck the ends under.
Place the braided dough on a baking sheet lined with parchment paper.
Cover and let rise again for 30-45 minutes.
Preheat the oven to 350°F (175°C).
Brush the top with the egg wash.
Bake the bread until golden brown, about 25-30 minutes.
