2 tablespoon oil
1 onion, chopped
2 garlic cloves, finely chopped
5cm piece of ginger, peeled and chopped
1 large carrot, cut into matchsticks
150g mushrooms, sliced
130g corn kernels
350g chicken breast, cut into strips
200g chinese greens, split greens & white stalks, sliced into matchsticks
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon fish sauce
1 teaspoon cornflour
150ml water
oil for frying eggs
4 eggs

Heat oil in a wok. Add onion and ginger and stir fry for a minute or two.

Add carrots and the white stalk from the chinese greens, stir fry for another minute.

Add chicken and stir fry until cooked through.

Add chopped chinese green leaves and mix well.

Add soy sauce, oyster sauce, and fish sauce, mixing well.

In a bowl, mix cornflour and water until smooth, then add to the stir fry and mix well to thicken the juices.

Boil the rice according to package instructions, adding salt if desired. Drain and set aside.

In medium-sized bowls, add 2 large tablespoons of the stir fry chicken mixture at the base, then cover with rice and press down to compact.

Place a small dinner plate over the bowl and flip it over carefully, removing the bowl to reveal the dome shape.

Fry the eggs in oil, sprinkling a little salt, until the whites are set but yolks remain creamy, then place the fried egg over the dome.
