Chop the walnuts into medium-sized pieces.
Crack 8 eggs into a large bowl and add a pinch of salt.
Add vanilla extract and powdered sugar to the eggs and mix well.
In a large pot, add sugar and caramelize it over medium heat, stirring until melted.
Add room temperature unsalted butter to the caramelized sugar and stir until combined.
Remove from heat and quickly mix in the egg mixture to avoid scrambling the eggs.
Add chopped walnuts to the mixture and stir to combine.
Return the pot to medium heat and cook for 5-10 minutes until the mixture thickens slightly.
Layer the mixture between wafer sheets using an offset spatula, ensuring to divide it equally.
Place parchment paper on top and weigh it down with a heavy object to help set the layers.
Refrigerate for 8-12 hours or overnight to allow the cake to set before cutting.
