Sift 1 kg of flour into a bowl.

Activate the yeast with 2 tablespoons of sugar and 2 tablespoons of warm milk.

Mix the rest of the warm milk with sugar until dissolved.

Add the activated yeast to the flour and mix a little, then let it rest for 10 minutes.

After 15 minutes, add egg yolks, zest of one orange, optional lemon zest, a pinch of salt, olive oil, room temperature butter, 4 tablespoons of cream, and vanilla extract.

Add the milk with dissolved sugar and knead the dough for about 5 minutes.

Check for any remaining flour and knead for another 4-5 minutes until well mixed.

Grease a bowl with a little oil, place the dough inside, cover, and let it rest for 1.5 to 2 hours.

Prepare the walnut cream by mixing ground walnuts, 2-3 tablespoons of cocoa powder, and vanilla extract, then refrigerate.

Divide the dough into four equal portions and roll it out.

Spread the walnut cream on the dough and shape it into a braid, placing it in a mold.

Cover and let it rest for 45 minutes.

Mix egg yolks with a few drops of milk and brush over the top of the dough.
