Today, Maafe has gained global popularity, with variations found in many West African countries, each adding their unique twist to this hearty stew.

Wash the beef and season it with salt, mixing well and setting it aside.
Blend green bell peppers, scallion, and scotch bonnet together.
Prepare a tablespoon of garlic and ginger paste.
Chop onions and set aside.
Cut vegetables (cabbage, carrots, green bell peppers, sweet potatoes) into preferred sizes and set aside.
Heat a pan on medium heat and add some oil.
Add the seasoned beef to the pan and fry until nicely browned on both sides.
While the meat is frying, add chopped onions to the pan, followed by garlic and ginger paste, stirring until fragrant.
Add the blended green bell pepper mix to the pan, rinse the blending bowl with a little water, and pour it into the pot.
Mix everything together, cover, and let the meat cook until almost done, stirring occasionally to prevent sticking.
Add a tablespoon of tomato paste to the pan and fry for a few minutes.
In a bowl, add three tablespoons of peanut butter and loosen it with hot water, stirring until smooth.
Pour the loosened peanut butter over the meat and mix everything together.
Season the stew with curry powder and paprika, adding enough water to reach desired thickness.
Add the chopped vegetables (cabbage, carrots, sweet potatoes) to the pot, saving some green bell peppers for later.
Add thyme and salt to taste, along with one whole scotch bonnet for extra heat.
Mix everything well, cover, and let it cook for about 35 to 40 minutes or until the vegetables are tender and the stew is rich and thick.
