Start by laying out the ingredients: 10 ounces of washed and dried mature spinach, 2 cloves of minced garlic, 2 teaspoons of minced ginger, 1 teaspoon of reduced sodium soy sauce, 2 teaspoons of toasted sesame oil, 2 teaspoons of rice vinegar, and 1 tablespoon of sesame seeds.
Heat a medium-sized skillet over medium heat, ensuring it's not too hot.
Add 2 teaspoons of toasted sesame oil to the skillet and swirl to coat.
Add the minced garlic and minced ginger to the skillet and sauté until fragrant, about 30 seconds.
Add the sesame seeds to the skillet with the garlic and ginger and cook until fragrant.
Begin adding the spinach in batches, tossing to wilt and making room for more spinach as it cooks down.
Continue adding and tossing the spinach until all of it is in the pan and wilted, about 2 minutes total.
Turn off the heat and drizzle 1 teaspoon of reduced sodium soy sauce and 2 teaspoons of rice vinegar over the spinach.
Give everything a final toss to combine and serve immediately.
