Coconut Rice & Beans

1 cup red beans
1/2 cup diced onions
1/4 cup chopped fresh cilantro (for garnish)
1 tablespoon minced garlic
1 cup water
1 cup long grain white rice
1/2 tsp black pepper
1/2 tsp pink Himalayan sea salt
1 can (15 oz) coconut milk

Put red beans in the slow cooker with diced onions, cilantro, minced garlic, and a lot of water and let it cook overnight.

Wash long grain white rice twice.

Add the washed rice to the pot with the beans.

Check the bean to rice ratio to ensure it's good.

Add a whole tin of coconut milk instead of the broth from the beans.

Add black pepper and pink Himalayan sea salt to taste.
