Coconut Rice & Beans

2 tablespoons butter
1 tablespoon olive oil
1/2 cup chopped onions
5 curry leaves
1/2 cup roughly blended peppers
2 dry catfish seasoning cubes
1/2 teaspoon salt
1 cup parboiled rice
1 can (15 oz) cooked beans, drained and rinsed
1 can (15 oz) coconut milk
1 lb grilled catfish

Add butter and a little bit of oil to the pot and allow to heat up.

Add chopped onions and curry leaves, and allow to fry for a while.

Add roughly blended peppers and more onions, then add dry catfish seasoning cubes and salt, stir, and allow to fry for a while.

Add parboiled rice and cooked beans, stir until well combined.

Add coconut milk and grilled catfish, stir for salt.

Cover with parchment paper or foil to trap in heat, cover, and allow to cook on medium heat until done.
