Combine ground beef, egg, salt, and pepper in a bowl; mix until just combined.

Remove the patties from the skillet and set aside on a plate.
In the same skillet, add butter and melt over medium heat.

Sprinkle flour over the onion and mushroom mixture; stir to combine and cook for 1-2 minutes.
Gradually add beef broth, Worcestershire sauce, and soy sauce; stir until the sauce thickens, about 3-4 minutes.
Return the patties to the skillet, spooning gravy over them; simmer for 5 minutes to meld flavors.
Garnish with chopped parsley before serving.
