Traditionally, this dish is served during family gatherings and special occasions, showcasing the rich flavors of slow-cooked meat and hearty vegetables. Today, variations can be found across East Africa, adapting to local ingredients and preferences, making it a beloved comfort food.

Chicken thighs are lower in fat, while pork shanks are more affordable.

Grape juice provides sweetness without alcohol, while white wine can be less expensive.
Fry 2 large onions in a little amount of oil until translucent.
Add crushed garlic and mix well, allowing it to cook.
Add spices of your choice and mix to ensure they cook with the onions and garlic.
If using, add tomato paste; if not, proceed with the meat.
Add the cut of meat (ossobucco) to the pot and allow it to cook on one side before turning it over.
Cover the pot and let the meat cook slowly on low flame for a few minutes.
Blend 3 large tomatoes with dania and add the mixture into the pot with the meat.
Season accordingly and cover to allow cooking.
Add rosemary for tenderizing the meat and add carrot, mixing well.
Cover and allow to cook, checking if the meat is cooked to preference.
Once most of the water has evaporated, add dania for garnishing and taste.
Add a few drops of soy sauce for color and taste, mixing well.
Allow to cook for another minute before serving.
