Gather your materials including containers for the finished ice cream, either reusable or disposable.
Use an ice cream machine; the creator uses a KitchenAid freezer bowl attachment that has been frozen overnight.
Understand that ice cream is an emulsion of fat and water, primarily from cream and milk.
Know the main ingredients for ice cream: ice crystals, fat, sugar, and air.
Mix together 1/2 cup of white sugar, 1/2 teaspoon of xanthan gum, 1 tablespoon of dry milk powder, and 1/2 teaspoon of salt until combined.
Add 2 tablespoons of corn syrup to the mixture and mix until the sugar and stabilizers appear wet and combined.
Slowly incorporate 1 1/2 cups of heavy whipping cream and 1 1/2 cups of half and half into the mixture on low heat, stirring until the sugar dissolves completely.
Once the sugar is dissolved, transfer the mixture to a clear container and refrigerate for at least 6 hours (up to a week) to cool before churning.
