The ensaimada is filled with pastry cream, which is traditional.
Cut a portion of the ensaimada, showing how to cut it properly.
Start preparing the dough by adding 3 eggs to a bowl.
Add 50 g of fresh yeast to the eggs.
Add 250 g of sugar to the egg and yeast mixture.
Mix the eggs, yeast, and sugar together until well combined.
Add 250 ml of water to the mixture and combine.
Gradually add 1 kg of all-purpose flour to the mixture, integrating it slowly.
Knead the dough until it reaches the right consistency, adjusting flour as needed based on egg size.
Use a whisk or a spoon to mix the dough initially, then switch to using hands for kneading.
Check the texture of the dough to ensure it is not too hard or too soft.
