Its name derives from 'saïm', the local word for lard, which is essential for its flaky texture. This spiral pastry is often dusted with powdered sugar and can be filled with a variety of sweet fillings. Today, it is a symbol of Mallorcan culture, enjoyed not only in Spain but also in various adaptations around the world.

Mix flour, sugar, and salt in a large bowl.
Dissolve yeast in warm water and let sit until frothy, about 5 minutes.
Add the yeast mixture to the flour mixture along with eggs and milk.
Knead the dough until smooth and elastic, about 10 minutes.
Cover the dough and let it rise in a warm place until doubled, about 1-2 hours.
Roll out the dough into a large rectangle on a floured surface.
Spread lard evenly over the dough, leaving a small border.
Sprinkle with sugar, cinnamon, lemon zest, and orange zest.
Roll the dough tightly into a log, then coil it into a spiral shape.
Place the spiral on a baking sheet lined with parchment paper.
Cover and let rise again until puffy, about 30-45 minutes.
Preheat the oven to 350°F (175°C).
Bake the ensaimada until golden brown, about 25-30 minutes.
Let cool on a wire rack before dusting with powdered sugar.
