1

Take 3 cups of flour in a mixing bowl.

2

Add 1/4 to 1/2 teaspoon of instant yeast and 1/2 teaspoon of salt to the flour and mix well.

3

Gradually add about 1 cup and 1/4 cup of warm water to the flour mixture to form a dough.

4

Once the dough comes together, add 2 tablespoons of oil to it and mix well.

5

Cover the dough with a cloth and let it rest for 15 minutes.

6

Melt 1/2 cup of butter in a pan over low heat until it becomes brown butter, then set aside.

7

After resting, divide the dough into two equal portions.

8

Roll out each portion slightly and apply some oil on top.

9

Stretch the dough into a large flatbread shape on a working surface.

10

Apply the brown butter on top of the stretched dough and sprinkle kalonji as desired.

11

Fold the dough into a half-moon shape and repeat the butter and kalonji application process.

12

Shape the folded dough into a triangle and stretch it again, repeating the butter and kalonji application.

13

Secure the edges of the dough to prevent it from opening while cooking.

14

Cover the shaped dough and let it rest for another 5 minutes.

15

Preheat the oven to 180 degrees Celsius.

16

Spread the dough in a round baking dish and apply butter on top.

17

Sprinkle kalonji on top of the buttered dough.

18

Bake in the preheated oven for 8 to 10 minutes, checking for a golden brown color.

19

Once golden brown, remove from the oven and cover for 5 minutes to prevent drying.

20

Serve the Yemeni Malawah hot.
