In a bowl, combine 1.5 pounds of ground beef with 2 teaspoons of salt, 1 teaspoon of black pepper, 2 teaspoons of oregano, 2 teaspoons of rosemary, and 1 egg.
In a blender, blend 1 cup of oatmeal until it turns into flour. Pour into a small bowl and add 1/2 cup of warm cream, mixing until smooth.
Pour the oat flour mixture into the bowl with the ground beef.
Finely chop 1 onion and sauté in a frying pan with olive oil over medium heat for 3-4 minutes.
Grate 2 garlic cloves and add to the pan, frying for another 2-3 minutes.
Transfer the onion and garlic mixture to the bowl with the ground beef and mix thoroughly.
Slice 4-6 potatoes into very thin circles and grease a baking dish with olive oil.
Arrange the potato slices in a spiral pattern along the bottom of the baking dish.
Form the meat mixture into even-sized meatballs and place them gently on top of the potatoes.
In a small bowl, mix 4 ounces of Greek yogurt with 1 teaspoon of oregano, 1 teaspoon of black pepper, and finely chopped parsley, then add 1/2 cup of water and mix until smooth.
Pour the yogurt sauce evenly over the meatballs and potatoes.
Place the dish in the oven and bake at 360°F (180°C) for 40 minutes.
While the dish bakes, prepare a salad with mixed salad greens, chopped bell pepper, sliced mini cucumbers, halved cherry tomatoes, and diced avocado.
After 40 minutes, remove the dish from the oven and sprinkle 7 ounces of grated cheddar cheese over the meatballs.
Return the dish to the oven for another 20 minutes until the top is golden and bubbling.
For the salad dressing, mix 2 tablespoons of olive oil, 1 teaspoon of mustard, 1 tablespoon of lemon juice, 1 teaspoon of salt, 1 teaspoon of oregano, and 1 teaspoon of black pepper.
Pour the dressing over the salad and stir gently.
Remove the meatballs and potatoes from the oven and sprinkle with finely chopped green onions before serving.
