Begin by making the atar (sugar syrup) by boiling water and granulated sugar in a pan on high flame for 1 minute.

Once boiling, reduce to medium-high flame and let the sugar melt, checking for impurities.

If impurities are found, add 1 tablespoon of milk to clear the syrup.

Add rose water and orange blossom water to the syrup and allow it to boil for another minute.

Squeeze in the juice of half a lime and stir well, allowing the syrup to boil for 3 minutes until it reaches one thread consistency.

Remove the syrup from heat and let it cool to room temperature.

Next, prepare the filling (hashway) by using crushed walnuts (untoasted) and store-bought samosa pastry instead of traditional phyllo dough.

Melt butter and brush it onto the samosa pastry sheets to moisten them.

Sprinkle a generous amount of crushed walnuts on one end of the pastry sheet.

Roll the pastry tightly around the walnut filling to form cylindrical rolls.

Repeat the rolling process with the remaining sheets and filling until all are used up.

Place the rolled baklava in a glass baking dish and ensure the layers are crisp with 20 layers at the bottom and 20 layers at the top.
