Broccoli Salad with Grapes

1 slice bacon
1 tablespoon plain Greek yogurt (or 1/2 tablespoon yogurt and 1/2 tablespoon mayonnaise)
1 teaspoon red wine vinegar
1/2 teaspoon sugar
1/4 teaspoon salt
1 cup broccoli
1/2 cup red grapes
1 tablespoon minced red onion
1/2 tablespoon almonds (roughly chopped or sliced)

Heat frypan over medium heat. Once hot, add slice of bacon, cook until both sides are to desired crispiness. About 5-7 minutes.

While bacon is cooking, make dressing in mixing bowl. Add 1 tablespoon plain Greek yogurt (or 1/2 tablespoon yogurt, 1/2 tablespoon mayonnaise), 1 teaspoon red wine vinegar, 1/2 teaspoon sugar, and 1/4 teaspoon salt. Whisk together. Set aside.

Chop broccoli, slice grapes, and mince onion if not pre chopped. Measure out 1 cup of chopped broccoli, 1/2 cup grapes (sliced in half), and 1 tablespoon minced onion. Save remaining ingredients for another recipe.

Place bacon on cutting board, blot out excess grease with a paper towel if desired, chop into bite sized pieces.

Add vegetables and bacon to mixing bowl, and mix together with tongs until dressing coats all vegetables. Add 1/2 tablespoon chopped almonds prior to serving.
