1

Prepare the sauce by mixing 5 tbsp ketchup, 4 tbsp sugar, 2 tbsp honey, and 3 tbsp water in a bowl.

2

Cut 1 lb chicken breast in half, then make four cuts into strips and turn the breast 90° to cut into 1-inch cubes.

3

In a bowl, mix the chicken cubes with 1 tsp salt, 1/4 tsp garlic powder, 1/8 tsp white pepper, and 3 tbsp water. Set aside and refrigerate for 15 to 20 minutes.

4

Make the batter by cracking 1 egg into a bowl and adding 1/4 tsp salt, 1/4 tsp garlic powder, and 10 tbsp cold water. Whisk together.

5

Add 2 tsp baking powder, 1 cup cornstarch, and 3/4 cup flour to the egg mixture and mix until smooth. Then add 2 tbsp vegetable oil to the batter.

6

Mix the chicken again and pour the batter over the chicken, ensuring all pieces are coated.

7

Heat oil to 375°F (190°C). Use a fork, skewer, or tongs to lower the chicken into the oil and fry for 1 to 1.5 minutes, moving occasionally for even cooking.

8

Remove the chicken from the oil and set aside. Continue frying the remaining batches of chicken.

9

Once all batches are fried, return all the chicken to the oil and fry until golden brown, about 4 to 5 minutes, moving occasionally for even cooking.

10

Pour the prepared sauce into a large pan or wok and heat until bubbling, then turn off the heat.

11

Add the fried chicken to the sauce and lightly toss until all pieces are coated.

12

Sprinkle toasted or roasted sesame seeds on top and serve immediately.
