Peel the Maris Piper potatoes.
Cut the potatoes into 1.5 cm cubes, measuring how the potato sits and cutting through the equator for even cubes.
Place the cubed potatoes into cold water to soak.
Season the water heavily with salt, making it taste like the sea.
Bring the water to a gentle boil and cook the potatoes for 8 to 10 minutes until parboiled.
Drain the potatoes and place them in a colander.
Cover the colander with a tea towel to steam dry the potatoes for about 10 minutes, ensuring they dry off for crispiness.
Preheat the oven to 200°C and add vegetable oil to a tray, ensuring it coats the base.
Once the oil is hot, add the dried potato cubes to the tray and spread them out slightly.
Return the tray to the oven and cook until golden and crispy, turning the potatoes halfway through the cooking time.
Chop fresh rosemary and parsley while the potatoes are cooking.
Grate Parmesan cheese using a microplane for a fine texture.
Once the potatoes are crispy, remove them from the oven and add the grated Parmesan, chopped rosemary, and parsley.
