Rolled Baklawa with Pistachio Filling

Preheat the oven to 350°F (175°C).
Melt butter in a saucepan over low heat.
Lay one sheet of phyllo dough on a clean surface and brush with melted butter.
Sprinkle a layer of finely chopped pistachios and a pinch of cinnamon on the phyllo.
Layer another sheet of phyllo on top and brush with butter again.
Repeat the layering process until desired thickness is achieved.
Roll the phyllo tightly into a log shape, sealing the edges with butter.
Place the rolled baklawa in a greased baking dish.
Bake in the preheated oven for 25-30 minutes or until golden brown.
While baking, combine sugar, water, lemon juice, and rose water in a saucepan.
Bring the syrup to a boil, then reduce heat and simmer for 10 minutes.
Remove baklawa from the oven and immediately pour the hot syrup over it.
Allow the baklawa to cool and absorb the syrup for at least 1 hour before serving.
