Ghapama

1 pumpkin
1 cup boiled rice
2 tbsp butter
1/4 cup chopped almonds
1/4 cup chopped dried apricots
1/4 cup raisins
1/4 cup dried plums
1/4 cup dates
2 tbsp honey
1 tsp salt
1/2 tsp black pepper
1 tsp cinnamon
2 tbsp vegetable oil

Preheat the oven to 350°F (175°C).

Cut the top off the pumpkin and remove the seeds and guts.

In a pot, boil the rice until cooked, then drain.

In a bowl, mix the boiled rice with chopped almonds, dried apricots, raisins, dried plums, dates, honey, salt, black pepper, and cinnamon.

Stuff the pumpkin with the rice and dried fruit mixture.

Drizzle vegetable oil over the stuffed pumpkin.

Place the stuffed pumpkin in a baking dish and cover with foil.

Bake in the preheated oven for about 1.5 hours, or until the pumpkin is tender.

Remove from the oven, let cool slightly, then cut into wedges to serve.
