Carve out all of the seeds from the pumpkin and scrape the walls clean.

Rub olive oil all over the pumpkin and sprinkle with salt and black pepper.

Set the pumpkin aside on a sheet tray.

Dice the onion and yellow bell pepper.

Slice the jalapeno and cherry tomatoes, and mince the garlic.

Add 2 cups of rice and 2.5 cups of water to a pot, bring to a simmer, and cook for 10 minutes until not fully cooked.

In the same pot, add oil and sauté the onions until translucent.

Add the diced peppers, garlic, and tomatoes, and stir.

Season with Aleppo pepper or paprika and cumin, then set aside.

In a pan, add ground lamb, season evenly, and mix well.

Fill the pumpkin with the mixture until it peeks over the top.
