Ghapama

Cultural Context

Ghapama is a traditional Armenian dish, often served during festive occasions and family gatherings. 1 medium sized pumpkin
1 cup rice
1 stick butter
almonds
pine nuts
dried plums
dried apricots
raisins
dates
honey
salt
black pepper
cinnamon
vegetable oil

Wash and cut the pumpkin, removing the guts.

Drizzle honey around the inside of the pumpkin using a brush.

Individually fry and roast the almonds and pine nuts in vegetable oil.

Cut the dried fruits (plums, apricots, raisins, dates) to a uniform size.

Mix seasonings (honey, a little oil, salt, and pepper) together for easier application.

Boil the rice with a little salt until just cooked, adding enough water to cover it.

Add 4 tablespoons of melted butter to the rice and mix well.

Layer half of the rice at the bottom of the pumpkin.

Add half of the mixed nuts and fruits on top of the rice.

Add the second layer of rice on top of the nuts and fruits.

Add the remaining nuts and fruits on top of the second layer of rice.

Drizzle a generous amount of honey on top of the pumpkin stuffing.

Cover the pumpkin with foil and place it in a preheated oven at 350 degrees.

Cook until the pumpkin is tender (about 1 hour and 15 minutes), checking with a knife.

Remove from the oven and present the dish.
