Combine cornmeal, fresh grated coconut, pumpkin puree, brown sugar, sweetened condensed milk, melted salted butter, vanilla extract, cinnamon, nutmeg, and ginger in a large bowl and mix until well combined.
If using unsalted butter, add half a teaspoon of salt.
Prepare banana leaves by washing and drying them.
Place a portion of the mixture onto a banana leaf, fold the ends inwards, and secure with cooking twine.
If the banana leaf breaks, use tin foil to secure the mixture instead.
Wrap the mixture in tin foil if banana leaves are not available.
Boil a pot of water until it reaches a rolling boil.
Place the wrapped packets into the boiling water and cook for 30 minutes.
Allow the packets to cool before opening.
